2016 Gemma Camaryn Chardonnay


Tasting Notes:  In swirling this wine the first aroma that escapes the glass is delicate citrus blossoms and continues to offer a bouquet of tropical fruits, mango, pineapple and brûlée pear. The palate is generous with raw honey, ginger and spice. The white peach and ginger adds a complimentary layer of tension in the palate finishing with a fresh vibrant presence.

"The Girls" are made with NO pressing, it takes two tons to yield one barrel, there is no inoculation on either primary and secondary fermentation with no nutrient additions, minimal use of SO2 and the use of an OXO rolling system for lees incorporation instead of stirring. As a result of this extremely reductive winemaking to protect these wines, they actually NEED air to open.
